i love pancakes (i used to make them for an after-school snack in high school ... a SNACK! good thing i was playing sports almost everyday) ... what i don't love is how they make me feel after eating them; nonetheless, it doesn't stop me from digging into a stack once in a while ...
here's my favorite recipe ...
1 cup whole wheat flour
1/2 cup rolled oats (quick or old-fashioned) uncooked
1 tablespoon baking powder
1 1/4 cup skim milk*
1 tsp vegetable oil (can use applesauce as a substitute)
*check with your local farmers market for milk and eggs
heat griddle over medium-high heat, oil lightly. combine dry ingredients in a large bowl. add milk, egg and oil; stir just until dry ingredients are moistened. for each pancake, pour about 1/4 cup batter on hot griddle. turn when tops are covered with bubbles and edges look cooked. turn only once.
they're perfect for a lazy sunday. but, if you're too lazy to make them (but not too lazy to go out for brunch) and you live in nyc, bubby's has really amazing pancakes (and they strive to use local and seasonal ingredients, a huge plus).
